I’m still here…

Woops.  It’s been a while.  I’ve been really busy!  Seriously, traveling for work and fun.  But hopefully we’ll settle down for a while and just relax.  Not.  That’ll never happen.  Too many things to do and see.  :)

A couple of weeks ago we got to go see NEEDTOBREATHE and Ben Rector AGAIN on the Reckoning Tour!  We got to see them twice on the same tour!  I’m so lucky!  Soooo amazing and worth it.  I’m just going to show pictures so you can see how awesome it was.  We were in the FRONT row.  That’s right, we stood for 3 hours not including waiting in line for 3 hours.

that’s city livin’

I went over to my bestie’s house because it had been a while since we’d seen each other.  We ran some errands before dinner picking up supplies and looking for birthday cake Oreos.  I’ve heard everyone talk about them but I can’t find them ANYWHERE.  No such Oreo luck.  We headed to Mary and Chez’s for dinner and had homemade fish filets with coconut crusted tilapia – YUM.  After dinner we talked about the dumb abortion Oregon lawsuit, the VT court ruling and Hunger Games.  Thankfully we talked about the Hunger Games for a good while.  Basically we had a mini book club about the most awesome books ever.  I CAN NOT WAIT to see the movie!!!  Also, amazingly, Mary and Chez had 2 packs of birthday cake Oreos!  So I finally got to have some and they are amazing!

After dinner, some other peeps came over for Car bombs- you know because St Patty’s day is coming up and we had awesome weather.  See?  I’m wearing shorts.

So the guy that lives under Mary and Chez was telling them how he barely hears them sometimes.  And then he said (something along these lines, I know I won’t get it right) “Well it would be ok if I did hear you because you know, that’s city livin’!”  So last night when they were getting ready to drop the shot into the Guinness, someone dropped theirs in too soon and was like shoot!  And we all died laughing because he didn’t know what to do.  So a few minutes later, Mary said “I’m just reliving it.”  But Eliz and Chez thought she said, “It’s just city livin’!”  So everytime something happened the rest of the night we would say, “that’s city livin’!”

Win + e = wine

This past weekend we made a quick road trip up to DC.  Dorsa was hosting a wine and cheese party so we headed up for that awesomeness.  When we got there we started prepping right away.  We had a new wine but it was pretty nasty so we decided to turn it into sangria.  Dorsa and I ran to the store and this is the conversation that followed:

Erin: (We’re walking into Giant) Oh man, do we even know how to make sangria?

Dorsa: Isn’t it just sprite and wine?

Erin: I have no idea but we should probably look it up.

Dorsa: Good idea, I’ll look it up on my phone.

Erin: What did we do before we had cell phones?  We would get to the store and be like shoot, I don’t know how to make sangria.  Then we’d have to go back home and print it out…  What did people do before the internet?  They must have had to look it up in a dictionary or something… That’d be awful.

Dorsa:  A dictionary?  Seriously?  How about a cookbook…

Erin: Oh yeah, that too.

Dorsa’s friend Leija came over and we started prepping all of the food for the party, which was A LOT.  We made bacon wrapped jalapeno goat cheese poppers, chickpea guacamole, tie die sugar cookies, deviled eggs, and brie with pecans and maple syrup.

I really didn’t get any other pictures of all of the other food that everyone else brought.  There was so much!  Check Dorsa’s wine post for more mouth watering pics.  After we ate way too much, we headed outside to the firepit.  It was about 35-40 degrees so we were all huddling close to the fire.

On Sunday, Dorsa and I worked on our spring Pinterest challenge.  This is the only picture I’m going to show because I’m so mad at myself.  Haha.  In a nutshell, when I got home I hung the wreath on our fence and forgot to bring it inside.  So yesterday morning when I went outside I noticed it had rained outside and the lima beans that we had glued to the wreath were all swollen and the paint was basically dripping off.  FAIL.  And yes, I am in my PJ’s.  Don’t laugh.  I’m just glad this picture doesn’t show my ankles/feet because my pants are like 5″ too short.  Darn you short pajamas!

Actually, you should see my massive craft fail so you can laugh.  But not at me – with me.

And finally- twin pic!  We’re obviously not twins, if you haven’t figured this out yet, but we do the exact same things and think the same things all. the. time.  It’s scary.  We scare ourselves on a daily basis with how alike we are.

Lilly Bug

Brandon and I were able to go to New Jersey this weekend to visit our new little niece, Lilly(and her parents, of course)!  She is SO PRECIOUS.  I love her and I wish we didn’t live 7 hours apart.  We arrived Thursday night around midnight and went to bed because Court/Lilly were already asleep.  We woke up early and I got to see Lilly for the first time.  I couldn’t wait to get my hands on her but she had other things on her mind like a grumbly tumbly.  After feeding, I got to hold her while Court was able to shower.

Court and I were able to take her on a walk after they got back from the pediatrician. It was pretty chilly so she got to wear her fuzzy little bear outfit.  :)

I sure got my fair share of Lilly holding.  I was constantly walking around and bouncing up and down.  I’m not talking about the little bounces.  I’m talking about the big stand on your toes and then go into a squat type of bounce.  Needless to say, I have very sore calves/thighs and arms.  I don’t feel like anyone ever talks about that part of being a mom.  You have to be in good shape!

Even Toby was interested in Lilly.  He was so concerned with the little crying thing that I was holding.

When he wasn’t following Lilly and I around, he was guarding her room, the house or taking a snooze.

Courtney and I watched Moneyball while Lilly napped.  Isn’t she adorable?

After the movie, B and I cooked a birthday roast for Christopher and Courtney and even Lilly!   All of their birthdays are in the first 2 weeks of February.

We woke up at 5AM on Sunday and left before 6AM to make the trek back home.  It was supposed to snow later in the day and we wanted to beat the crazy drivers/snow.  We even had a few minutes to stop and see Steph, Shawn, Ethan and Kayla (Adam was already at church for sound team).

After a short 30 minute stop, we continued on home.  My mom was heading up to our house to get her 3 dogs (we were watching them this weekend as well) and we wanted to make sure she’d have enough time to get to our house and back home before the snow hit.  Brownie was all snuggled up on my lap for several hours.

And we made it home just in time to watch the snow fall!  Although we were too tired to fully enjoy it.  I was worthless laying on the couch while my amazing husband cooked dinner and did laundry… seriously?

Toby woke up this morning and was super excited to see the snow.

Shout out to my new fave ENGAGED couple!

I’m getting a new sister because my brother is getting married!!!!  He seriously couldn’t have picked a better girl.  She fits in so well with our family.  :)

But the fact is they’re AWESOME together and I can not wait for their wedding and for her to be my sister-in-law!!!  I love you Katie!!!

Vail, Colorado

Day 2.

We woke up in Boulder and had breakfast at a little coffee shop called The Cup.  I had a sweet potato and zucchini muffin (which was actually gluten free and quite tasty), fruit and coffee.  B had an egg/cheese bagel and coffee.  His was what you would imagine an egg/cheese bagel tasting like.  We quickly jumped on the road to start our ‘scenic drive’ to Vail.  It was supposed to take 4 hours but ended up taking more like 6.5 hours.  We drove on an amazing road, leaving Boulder, that had the most awesome views.  We probably passed about 300 bikers, I am NOT exaggerating.  I took a little video (of course after we passed the majority of the bikers and the view isn’t quite as incredible) of our first leg.

After about 20 minutes we saw this peach stand that I had to stop at.  My family has this thing for peaches…  My Granny’s sisters families own peach orchards in South Carolina and we love to stop at peach stands and farmers stands on the side of the road.

Before we entered the mountains, we passed what B thought were fake Elk on the side of the road.  I screamed and made him do a U-turn in the middle of the road, with oncoming traffic.  We pulled off and yep, real elk!  There was the man elk and his wifey.  She was too afraid to come close to anyone but he had no prob with us getting close to him.  In hindsight, probably not the smartest thing we’ve done, but oh well- we got good pics!


We also stopped at a little overlook which I guess what the beginning of Estes Park.  I’m not really sure if we drove through Estes Park or not, but we got a picture in front of a big rock with it’s name on it.

Those were the only two pictures we got of the both of us the whole trip.  Lame!  I just feel bad asking people to take pictures of us and usually people are scared off by the SLR camera (we didn’t have our point and shoot) that I don’t even bother asking.


Here is the beautifulness that I saw on our trip through the mountains.  Usually I don’t prefer being in the car for 6.5 hours (who does?) but when this is my view, it’s much more bearable.

When we arrived in Vail, we checked into our resort and ran out to rent bikes.  We only had an hour and a half until our 80 minute Swedish massages.  Oh yeahhhhh.  So we biked along the river to Vail Village where Brandon and I split a BLAT wrap (bacon, lettuce, avocado and tomato wrap).  I didn’t get a picture because I was so grumpy and hungry.  After we finished eating, we had about 30 minutes until we had to ride back and it was then that we stumbled upon “The Taste of Vail”.  Daggone it all!  Why hadn’t we found out there was going to be this festival of delicious food 15 minutes earlier!?!  But I did manage to get a chocolate cheesecake cupcake.  yum.

We biked back to our resort and ran to the spa.  {Haha I feel like I sound so snotty!  We don’t normally do stuff like this – stay in a resort and get 80 minute Swedish massages but sometimes you just gotta splurge aannndd it was my birthday!}  I wish I could have taken a picture of the spa but I wasn’t going to carry my SLR in there {the masseuse probably would have looked at me and said “seriously?  what are you going to take a picture of?”} and my phone has decided that it doesn’t need to take pictures anymore since I only have 7 days left with it.  When the masseuse was giving me my massage, every time she’d finish something, my foot for example, I’d scream in my head – “NO YOU CAN’T BE DONE WITH MY FOOT YET, DON’T STOP!!!  KEEP GOING OR I WILL SCREAM AT YOU FOR REAL”  So after the glorious 80 minutes were up, we left the spa and got ready for dinner.

We ate at Sweet Basil.  It was so delish!  The service was not so great, I think because everyone must think because we’re young we don’t deserve adequate service or maybe they think we won’t tip an acceptable amount – but I always tip my 20%, come on!  But don’t let me taint your perception of the food.  I had the Heritage Breed Double Cut Pork Chop with sweet corn puree, grilled king trumpet mushrooms, huitlacoche and raw corn/parsley salad.  It was as amazing as it sounds!  Brandon had the Grilled Venison Loin with spinach puree, root vegetable hash, pink peppercorns and pickled bing cherries.  They were both amazing but we both agreed my dish won.  We finished with Hot Sticky Toffee Pudding Cake with Myers’s rum sauce and whipped cream.  The waitress also convinced us to get 3 baby scoops of ice cream for $8.  Bad move – totally not worth it.  They were the size of miniature watermelon balls {you know the little scooper you use to make water melon balls?  yeah that small…}  And the ice cream wasn’t even that good.  But the toffee cake was unbelievably incredible and if you go to Sweet Basil, you MUST get this!
